    I have a question: what are the benefits of purchasing an HTST pasteurizer instead of designing the heat exchangers, homogenizer, and mixing tanks and integrating them into the process? I understand that designing these components ourselves might be more cost-effective. Great content, already a subscriber!

    Greetings, fascinating channel, I've been enjoying working through these videos. However, I have a unique case: I'm below the poverty line, and it's quite a struggle. I have a unique skill-- I've been cooking since very young(8 or so, 38 today). I love making ice cream. Merely being descriptive here and not bragging: I'm skilled at it. Despite having a cheapo-maker, I use my own creative techniques to avoid common problems like crystalization, I invested into some stabilizer, and the product I make is often better or at least on par/comparable with what is available locally(Which is New York City-- quite competitive). I wish to just do a walking vendor strategy as my entry into ice cream business. Not sure how to go about this, perhaps a ... rubbermaid cooler converted into a backpack? Maybe dry ice? I have lots of novel and creative ideas, it's just the execution that's tough for me. Any tips would be highly appreciated-- best wishes, and thanks for the thorough and educational content. Ice cream wisdom! :)

      Selling it in a small towable trailer is a good option. ice cream machines may be a way and there may be local places you can advertise like facebook. those are the ways ive contemplated.

      @@chrisw7347 not a bad idea especially if you can have a hat or some clothes with your emblem or even just a hat to seem legit. As you grow in sales you can expand in any direction from there. What my real expertise is in formulating ice cream. I make dairy sensitive frozen yogurt for lactose intolerance. Ive worked Alot of sales jobs and I have definitely seen people start a small business like yours going door to door or even sell on the street and turn it around into a serious business.

      @@chrisw7347 Badass dude sounds like you are dedicated. I think its a great idea. Get a hat with your brand on it down the road when you have some profits and i say the sky is the limit dude. Ive been in sales so i have certainly seen people start a business that way and it work. Ive been in sales and formulation for a while so if you have any questions feel free to ask.

    Question I have made the sauce serve ice cream without putting that valve in I wasn’t sure what that part was when I first got the sheet and I have been unable to contact the company I purchased the machine from Jay are not responding so I’m curious what the difference would be also there’s a button that when you push it says C3 when you push it again it says C4 and then it says C5 and then C6 and then back to C3 what is this button for those are the two questions I have

    If I was a customer ordering a shake, I'd feel like I was getting an inferior product if I ordered a strawberry shake and got vanilla ice cream with a shot of syrup. If a syrup had to be used, I'd think strawberry (or whatever) ice cream + a shot of strawberry syrup would create a better impression for the customer.

      @@ScoopSchool Hey love the channel. Sorry for the long story but Milkshakes have been the biggest headache for us since we opened…. Some background.. I own a restaurant in Columbus that was originally founded by my Dad in the 80s and was known for our Burgers, Hot Dogs, Fries and Ice Cream. We make all our own Ice Cream and we were actually voted best chocolate ice cream in America back in 1983 and there were actually 100 locations around the country at its peak but because a few bad business decisions there are only a few franchises left in Indiana and Kentucky. And the concept is almost like if FiveGuys or ShakeShack and a scoop shop had a baby. But anyway fast forward to 5 years ago we are trying to restart the brand in Columbus and the biggest “headache” we have had is the demand for milkshakes. Our Ice Cream is a super premium product (18% butterfat, 10-12% overrun) and is extra creamy and does not have a “gummy” after taste, and when you spin our ice cream into a milkshake everything that we makes our ice cream goes away, I a lot of times compare turning our ice cream into a milkshake like ordering a Pappy Van Winkle Bourbon and coke. When we opened we were selling over 300 milkshakes a day, and even when we got through our Honeymoon phase we are still averaging close to 100 shakes a day and sometime over 200. So a few years ago we started promoting 2 “levels” of milkshake flavors…5 classic flavors (chocolate, vanilla, strawberry, cookies and cream, peanut butter, and buckeye (made with a Vanilla or Chocolate Ice cream base which is the least expensive ice cream we can buy) and “Elite” flavors made with our house made ice cream for people like @raymond132 who want the shake made with the house made ice cream that they will just have to pay more for. But the con to this is we only have one size milkshake (16oz) and when someone just orders a shake they are normally not stickershocked but a $7.99 price for a milkshake but when they get a burger fry and milkshake they are shocked that their total is $18/$19. I once had a guy point to the size of a milkshake cup say “that’s the size of your milkshake? That’s a rip off. I’ll have 2 strawberries. I thought he was kidding at first but as he kept complaining I realized he was being serious. Have you ever seen a situation like this. How can I better make people realize that like you explain in this video that ice cream flavors don't alway translate to milkshake well.
